Katie Couric Announces Breast Cancer

Katie Couric is going public with her breast cancer diagnosis.  She said on her website Wednesday that she was diagnosed with breast cancer in June.  She had a mammogram June 20 after missing the routine checkup in 2021. Her doctor took a biopsy and informed Couric the next day that the test showed cancer.  “I felt sick and the room started to spin. I was in the middle of an open office, so I walked to a corner and spoke quietly, my mouth unable to keep up with the questions swirling in my head,” Couric recalled.  Couric’s first husband, Jay Monahan, died from colon cancer at age 42 in 1998, while her sister, Emily Couric, died from pancreatic cancer at age 54 in 2001. In addition, her mother and father both have a history with cancer.  “My mood quickly shifted from disbelief to resignation,” she said. “Given my family’s history of cancer, why would I be spared? My reaction went from ‘Why me?’ to ‘Why not me?'”  Couric had surgery to remove an olive-sized tumor in July and began radiation treatments Sept. 7. She will also take medication — an aromatase inhibitor — for five years.

Hugh Jackman Joining Deadpool 3

Ryan Reynolds announced on social media that Deadpool 3 will feature Hugh Jackman’s return as Wolverine. He also announced the sequel’s release date of Sept. 6, 2024.  Deadpool 3 will be the first Deadpool film made since Disney acquired 20th Century Fox. At Fox, Deadpool was tangentially part of the X-Men universe, having introduced Reynolds’ character in X-Men Origins: Wolverine and included other character cameos in Reynolds’ films.  Jackman previously insisted that 2017’s Logan was his last appearance as the character. Logan was set in the future as Wolverine’s powers were declining, so there is room for him to appear prior to the events of that film.  Reynolds set up the video speaking to the camera. Jackman walks by in the background and Reynolds asks if he’ll play Wolverine one more time.  Jackman responds, “Yeah, sure, Ryan.” Whitney Houston’s “I Will Always Love You” plays and the video continues to make puns like “Coming Hughn.” Wolverine’s claws slash the Deadpool logo before revealing the release date.

Meghan Markle Podcast Returning

After a four-week hiatus, Meghan Markle’s podcast “Archetypes” will resume with new episodes on Oct. 4th.  She had paused her Spotify podcast out of respect to Queen Elizabeth II’s passing in September.  Prior to the pause, Markle had recorded three episodes and quickly established the podcast as one of America’s top-rated productions.  Deadline reports that the first episode back will feature comic and actress Margaret Cho as well as Lisa Ling, in a conversation that is centered around Asian American representation in the entertainment industry.  In a teaser released prior to the release of “Archetypes,” Markle explained that the crux of her podcast was to “investigate the labels that try to hold women back.”  Prince Harry and Markle started their nonprofit organization Archewell in 2020 after the controversial decision to step down as senior royals. Their production company, Archewell Audio, produces the podcast.

Pierce Brosnan Remembers Mrs. Doubtfire’s Famous Improvised Line

Pierce Brosnan revealed Robin Williams improvised one of the most iconic “Mrs. Doubtfire” scenes, while opening up about the first time he met the late actor on set of the classic film.  During a recent interview with GQ, he recalled filming the movie with Williams and how many laughs they shared in the process.  Brosnan revealed one of Williams’ most iconic lines in the film wasn’t originally in the script and was an improvised moment that made it into the film.  In the scene, Williams, as Mrs. Doubtfire, throws a lime at the back of Brosnan’s character’s head. In an effort to escape blame, Williams told Brosnan it was a “run-by fruiting” committed by someone who ran away.  “‘Run-by fruiting,’ it wasn’t in the script,” Brosnan said. “I get the beers, I’m walking back and thinking, ‘This is going to take forever to hit me on the head.’ The first one missed. And the second one — is history.”  He recalled being excited about landing the role because he was a single father and he needed to be working but primarily because he “was a single father getting a job with Robin Williams.”  He also remembered his first time meeting the comedian, explaining they first met in the makeup trailer on Brosnan’s first day on set for “Mrs. Doubtfire.” He explained Williams was in the process of getting his Mrs. Doubtfire makeup on.  “I remember going up to San Francisco the first day. I went into the makeup trailer, and Robin was in there with a Hawaiian shirt on, big hairy arms and cargo shorts with hairy legs, but he had the head of Mrs. Doubtfire,” he said.

Tom Hanks Likes Only Four Of His Movies

Even though he starred in at least 85 films throughout his career, Tom Hanks thinks only four of those movies are “pretty good.”  He made the revelation to People while promoting his debut novel “The Making of Another Major Motion Picture Masterpiece,” set for release in May 2023.  “No one knows how a movie is made – though everyone thinks they do,” he told the outlet.  “I’ve made a ton of movies, and four of them are pretty good, I think, and I’m still amazed at how films come together. From a flicker of an idea to the flickering image onscreen, the whole process is a miracle.”  Hanks did not divulge which of the four films he was referring to.

Hocus Pocus House On AirBnB

Ahead of the release of Hocus Pocus 2, streaming tomorrow on Disney+, Airbnb has announced an exclusive opportunity to stay at a recreation of the Sanderson sisters’ cottage “in the remote woods of Salem, Massachusetts” on Oct. 20, for just $31 — in honor of Halloween’s Oct. 31 date, of course.  Aside from being able to sleep in beds decorated in tribute to Mary (Kathy Najimy) and Sarah (Sarah Jessica Parker) Sanderson, the lucky duo will be able to “try their hand at enchantments enshrined in the ancient spellbook that guided the sisters in all their mischief,” an official release teases.  “There’ll be everything you need, the beds and the sheets and the furniture and the dead man’s toe and the spiders,” Najimy, who reprises her role as Mary in the upcoming sequel, jokes in an exclusive conversation with PEOPLE.  Before exploring the inside of the witches’ cottage with their beds and spell book, guests will be greeted with the home’s familiar façade including a large rotating water wheel and a sign with information about “The Sanderson Witch Museum,” which the sisters’ home was famously turned into after they were hanged in 1693 — 300 years before the events of the first film. After making their way up the stone steps, guests will be treated to a simmering cauldron that would make Winifred (Bette Midler) proud, as well as an apothecary wall, ancient-looking bookshelves, several brooms, postcards and various potions.  Airbnb will make a donation to the Boys & Girls Club of Greater Salem, “which aims to ensure that success is within reach of every young person who walks through their doors,” a release from the company states.

Robot Breaks Running Record

A robot developed at Oregon State University broke a Guinness World Record by running 100 meters on two legs in less than a half-minute.  Oregon State University’s College of Engineering announced that the robot, developed at the school and produced by OSU spinoff company Agility Robotics, broke the Guinness World Record for fastest 100 meters by a bipedal robot.  The robot, dubbed Cassie, took to the track at the school’s Whyte Track and Field Center and ran the 100 meters in 24.73 seconds.  Cassie previously managed to run a 5-kilometer (3.1-mile) course in 2021 in just over 53 minutes.  The development team said Cassie is the first bipedal robot to use machine learning to control a running gait on outdoor terrain.  “We have been building the understanding to achieve this world record over the past several years, running a 5k and also going up and down stairs,” graduate student Devin Crowley, who led the Guinness effort, said in the news release.

Way Overdue VHS Tape Returned

Officials at a Kansas library received an unusual surprise when a patron returned a VHS tape that had been checked out 19 years earlier.  The Johnson County Central Resource Library said the tape, Russian film Burnt by the Sun, was checked out on a 7-day loan in 2003.  “It’s a blast for the past for us,” Amy Field, web content developer for the Johnson County Library, told the Shawnee Mission Post. “Sometimes they have old library stickers on them or the old ways of categorizing items, and that’s always fun for librarians to see again.”  It was unclear whether the patron will be fined for the return. The library imposes a 30-cent-per-day fine on late materials, but the fees are capped at $6 per item.  Field said the unusual return should serve as inspiration for any other library patrons to return their long-overdue items.

Bear Destroys SUV

A Peninsula woman vacationing in California captured video of the moment a bear fled from the back of her SUV after spending up to seven hours inside the vehicle.  Vicky Costantini of Redwood City, Pa., said she was visiting her vacation home in Arnold, a small community in Calaveras County, Calif., when she made an early morning discovery about her Range Rover SUV.  “There were lots of lights going off, the hazards were on. The car was honking. We need to open it to figure out what was in there,” Costantini told KTVU-TV.  She and her friends used the key fob to open the hatch and a bear emerged from the back of the vehicle. Costantini posted a video of the bear’s emergence to TikTok.  “It was foamy at the mouth when it came out. It was probably very dehydrated from having been in there so long. It was pretty desperate to get out,” Costantini said.  Costantini said the vehicle, which had been left unlocked the night before, was destroyed inside. She said there was a can of Altoids in the SUV when the bear entered, but the animal didn’t touch it.  “I often say a bear ate my car. It is destroyed,” said Costantini,”It ripped apart the dash. It was trying to get through the car. Every single door panel is destroyed. Every single seat is ripped. But the worse part was the smell.”  See the video HERE.

Raccoon Rescued From Peanut Butter Jar

Animal rescuers in Massachusetts assisted a raccoon spotted wandering with a peanut butter jar stuck over its head.  The Cape Wildlife Center in Barnstable said in a Facebook post that a rescue team dispatched to help the raccoon was initially able to contain the animal, but it soon escaped and fled into the woods.  The homeowner who originally reported the raccoon spotted the animal again the next day, and rescuers were able to locate its den.  The rescuers used a grabbing tool to reach into the den and pluck the jar from the raccoon’s head.  “Luckily, the jar hadn’t caused any trauma to his neck,” the post said.  The wildlife center said the rescue should serve as a reminder to make sure discarded food containers are properly cleaned and secured to avoid similar incidents.  See the pics HERE.

5 Mistakes To Avoid If You Want To Make The Best Homemade Soup

Mistake #1: Oversalting … or undersalting

If a recipe tells you to use one teaspoon of salt, that doesn’t necessarily mean it’ll come out tasting perfectly seasoned. The most important thing is tasting and seasoning as you go, and freeing yourself from the notion that you have to follow the recipe exactly.

Getting the salt level just right can be tricky when making homemade soup, because as it simmers the liquid evaporates (if you have the lid off) and the saltiness of the soup increases. For best results, our chef experts recommend gradually adding salt throughout the cooking process.

“Salt should be added a little in the beginning, some along the way and again at the end when the soup is almost done,” said Einav Gefen, a chef at the hospitality company Restaurant Associates.

If you’ve accidentally added too much salt, there are a few ways to fix it. Lisa Brooks, executive chef of Heart and Soul Personal Chef Services, recommends adding potato chunks to the soup and letting them absorb the salt. “This should work in most broth-based soups,” Brooks said. Gefen recommends adding more liquid (like broth), or fat (like cream) if the soup already has some in there. As a last resort, you can add in a little bit of everything that’s already in the soup to help change the salt ratio.

 

Mistake #2: Dumping in all your ingredients at once

At its core, soup is simmering a bunch of ingredients in broth. But that doesn’t mean you should just throw meat and vegetables into some boiling liquid and call it a day. If you’re using onions, for example, don’t just boil them in a pot.

“Onions need to be sautéed at least somewhat before adding liquid,” said Ben Goodnick, executive chef of Coastal Soups (a seasonal soup concept run by Summer House in Chicago). He recommends sautéing onions until translucent for a brothy soup, or browned for more hearty soups. “This makes the flavor sweeter and more mellow and complex,” he said.

It’s all about building flavor. “Sauté your aromatic base (onion, garlic, carrots, celery, ginger) and sear the protein (sausage, chicken, beef, pancetta, bacon),” Gefen said.

She recommends adding hearty herbs like thyme, rosemary and bay leaf early in the cooking process for maximum flavor extraction, then fine herbs like parsley, basil and cilantro toward the end. “Sometimes I use the stems of the parsley as a flavor booster early on and the parsley leaves towards the end,” she said.

 

Mistake #3: Not cooking it for long enough

Good soup takes time, and when making it, “low and slow” is the way to go.

“A gentle simmer is best, giving all ingredients time to infuse flavors and create a balanced, delicious soup,” Gefen said. There’s no hard and fast rule about exactly how long you should let a soup simmer, because that will depend on the ingredients you’re using.

Gefen notes that vegetable soups can come together in as little as 45 minutes, while soups with beans and legumes will need about an hour to an hour and a half. Beef-based soups made with tougher cuts typically need one to two hours for the meat to become tender.

“‘Low and slow’ is not only for the key ingredients to fully cook, but also for the flavors of all components to release into the liquids and create a delicious concoction,” Gefen said.

 

Mistake #4: Always leaving the lid on

To cover, or not to cover: That depends on the soup. In general, Gefen covers legume-based soups to minimize evaporation and avoid getting a soup that is too thick. She leaves most brothy soups uncovered and controls how much liquid evaporates by cooking over low heat.

Goodnick does this as well, noting that leaving the lid off so water can evaporate intensifies and concentrates the flavor.

 

Mistake #5: Cooking all the ingredients for the same amount of time

To ensure everything in your soup is cooked to an ideal consistency (aka no crunchy potatoes or mushy carrots), add ingredients into your soup according to their cooking time.

“If I am making a seafood chowder, I start stewing the harder vegetables like potatoes first,” Brooks said. “Any softer or frozen vegetables can be added later, and the last thing that should go in is the fresh seafood, since it takes mere seconds to cook through.”

Gefen said legumes and pulses take longer to cook than pasta, so they should be added first.
