Sinbad Improving Since Stroke

Sinbad is learning to walk again in the wake of his stroke.  His family gave a health update Monday, two years after Sinbad had an ischemic stroke.  Sinbad suffered a stroke in October 2020 after a blood clot traveled from his heart to his brain. He underwent a thrombectomy but another blood clot formed and he had to have a second surgery.  The actor’s brain then started to swell and he underwent a craniotomy to relieve the pressure and reduce swelling. Doctors then discovered a bleed and placed the star in a medically induced coma and on a ventilator.  “It would be weeks before he would open his eyes, speak, or show signs of basic mobility. It wasn’t long before we realized he couldn’t move his left side or simply hold his head up. The more time passed the more the family learned how much had been lost,” the family said.  Sinbad was weaned off the ventilator over the next few months and started physical, occupational and speech therapy in May 2021. The actor returned home in July of that year and has made “remarkable” progress in his recovery.  “He continues to receive therapy, fighting for every inch,” the family said. “Limbs that were said to be ‘dead’ are coming alive and he’s taking the steps necessary to learn to walk again. In his own words, ‘I am not done. I will not stop fighting until I can walk across the stage again.’ And neither will we.”

American Music Awards Ratings Drop

Americans were none-too-impressed with the 2022 American Music Awards that aired Sunday night.  Despite performances from the likes of P!nk, Cardi B and Glorilla, Missy Elliott and Anitta, Yola, and historic wins for the likes of Taylor Swift, Nicki Minaj, and Beyonce, their combined star power apparently wasn’t enough to court high viewership figures for the ailing awards show as the 2022 edition of the ceremony drew its lowest ratings to date. “ABC’s presentation of the American Music Awards on Sunday night averaged just 3.3 million total viewers and a 0.6 demo rating, down sharply from last year’s early numbers (3.8 mil/1.0) to mark all-time lows.”  NBC’s airing of Sunday night football won the night with 13.7 million viewers.

Meghan Markle Says Women Are “Vilified”

Meghan Markle thinks women are “vilified” for exploring their sexuality — while men are often praised.  “I don’t understand what it is about the stigma surrounding women and their sexuality and the exploration of their sexuality that is so much more vilified than for a man,” she said in Tuesday’s episode of her Spotify podcast, “Archetypes.”  “As you’re getting older, you’re exploring and starting to understand your sensuality, your feminine divine. Your sexuality, oftentimes, it can be very much used against you,” she said.  He explained that men are usually celebrated when they explore their sex lives and have no problem flaunting their experiences, whereas women are looked down upon if they show their sexual sides.  “A man, if he is a player, out having fun or whatever he’s doing, it’s often celebrated. Even heralded,” she said. “But for a woman, I don’t care if she’s perhaps the most successful woman in finance in her mid-50s, I promise you, someone will still go, ‘But she was such a slut in college.’”  Markle said the idea of a woman’s sexual journey will “stick with her” like glue.

The Chrisley’s Get Sentenced

Todd Chrisley and Julie Chrisley’s reality show, “Chrisley Knows Best,” has been canceled after their sentencing.  “The network has some episodes of season 10 of ‘Chrisley Knows Best’ that were shot prior to the trial that will air next year,” a source says.  The couple’s spinoff show, “Growing Up Chrisley,” has also been axed.  On Monday, Todd, 53, and Julie, 49, were sentenced to 12 and seven years in prison, respectively, for fraud and tax evasion.  Both of the USA Network personalities were also sentenced to 16 months’ probation.

Kanye West has revealed that he will run for president in 2024. West, who originally ran for president in 2020, added that he will be working on his campaign with far-right commentator Milo Yiannopoulos, a former intern for Rep. Marjorie Taylor Greene.  “It’s simple ’cause ain’t nobody can tell me, ‘You should say this, you shouldn’t say that,’ you know,” said West in a video posted on Nov. 20. “We’re moving towards the future.”  The announcement comes just days after former president Donald Trump also revealed that he will run for another term in the 2024 election.  In 2020, West ran as an independent candidate and received nearly 60,000 votes in the states where his name was on the ballot.  West’s Twitter account was restored over the weekend by Elon Musk, who recently purchased the social media company for $44 billion. The rapper was previously banned on Twitter in October for violating the policies of the site, after publishing a series of anti-semitic posts.

Chris Hemsworth’s Health Concerns

Chris Hemsworth is putting his health and family first since receiving some life-changing medical news.  In a recent interview with Vanity Fair, he said he will be taking a break from acting after learning he has two copies of the APOE4 gene, which greatly increases his chances of developing Alzheimer’s disease. The 39-year-old actor found out about this genetic predisposition while getting a bloodwork panel for his new Disney+ show Limitless, a docuseries about time, aging, and dying.  He’d initially planned to have a doctor explain everything to him on camera, but that all changed when the results came in, he told the magazine: “Peter Attia, who is the longevity doctor in that episode, and overseeing a lot of the show, called [show creator] Darren [Aronofsky] and said, ‘I don’t want to tell him this on camera. We need to have an off-side conversation and see if he even wants this to be in the show.’”  Armed with this information, Hemsworth has decided to take a step back from acting in order to rest and spend more time with his family. The Australian-born actor has three young children with his wife, Spanish model and actress Elsa Pataky. He’s been working consistently since the early 2000s, but his career really ramped up after 2011, when he first appeared as Thor in the Marvel Cinematic Universe movie of the same name.

Hollywood Flashback:  Naughty Bad Santa Is Nice!-(Globe)

Oddball actor Billy Bob Thornton plays the worst department store Santa ever in Bad Santa, a 2003 black comedy about an opportunistic thief who, with his dwarf sidekick dressed as an elf, robs malls during the holidays.  However, Santa finds he has a redeeming soft spot after all when he defends a bullied kid!  The first studio to see the script rejected the movie as “the foulest, disgusting, misogynistic, anti-Christmas, anti-children thing we could imagine”-but edgy audiences loved this stocking stuffer.

Pigs On The Loose

The Delaware Department of Agriculture is warning residents of an increase in feral pot-bellied pigs in the state as a result of pet owners setting the animals loose in the wild.  Stacey Hofmann, the department’s chief of community relations, said officials have noticed a sharp increase in the number of pot-bellied pigs roaming loose in the state since 2016, and they believe the cause to be pet owners releasing animals when they reach adulthood.  “Running at large, these pigs pose a nuisance to landowners, increase the threat of establishing feral pig populations, damage natural resources and risk carrying endemic diseases — such as salmonella or even swine flu — that can spread to both people and animals,” Hofmann told the Delaware News Journal.  State veterinarian Karen Lopez said officials are forced to euthanize many of the feral pigs.  “As they get older they’re not as attractive to adopters,” she told NPR affiliate WHYY. “And they may have already developed behavior problems. So the rescues don’t want to take these animals. But they’re not food animals, so livestock auctions won’t take them either.”

Bob Dylan’s Fans Get Fake Autograph

Bob Dylan’s publisher is offering refunds for a $600 special edition of his new book, “The Philosophy of Modern Song,” acknowledging that the allegedly “hand-signed” copies were not individually inscribed.  “To those who purchased THE PHILOSOPHY OF MODERN SONG limited edition, we want to apologize,” Simon & Schuster announced in a statement posted Sunday on Instagram. “As it turns out, the limited edition books do contain Bob’s original signature, but in a penned replica form. We are addressing this immediately by providing each purchaser with an immediate refund.”  Simon & Schuster’s statement came after days of complaints from customers, who through social media had compared their copies and found the autographs suspiciously alike. The books had arrived with a letter from Simon & Schuster CEO Jonathan Karp, vouching for the signature’s authenticity.

Spam Figgy Pudding Anyone?

The mad scientists at luncheon meat packager Hormel have come up with Spam Figgy Pudding.  The new seasonal Spam includes additional “fig and orange flavors, cinnamon, cloves, nutmeg, ginger and all spice.” And as ever, it is shelf stable in case of the apocalypse.  Figgy pudding is a dense, steamed cake (not an American-style pudding) full of raisins, currants, and brandy — and the modern version doesn’t actually include figs.  The product launched last week, and is already sold out at Spam.com and Amazon. Your best bet now is Walmart.com, or you’ll have to resort to the secondary market on eBay, where prices are already double the list price.

Florida Man Gets Angry Over Missing Keys

Patrons of a Florida bar were hailed for their bravery after tackling a man who held a gun to a woman’s head and opened fire when he became angry over his missing car keys, authorities said.  Connor Anderson had been inside Smiles Nite Club in Palm Coast with a woman Sunday night when witnesses said he was unable to find his car keys and “became upset,” according to the Flagler County Sheriff’s Office.  Anderson left the bar and returned with a firearm, putting the woman into a headlock and holding the gun to her head, deputies said.   Patrons intervened and tried to disarm Anderson as he fired the gun approximately six times toward several patrons inside the bar, according to authorities. Patrons were able to tackle Anderson to the ground before he fled the bar.  Responding deputies said they found Anderson in a nearby parking lot still armed with a 9mm Glock handgun. He was taken into custody without incident and arrested.  No injuries were reported during the incident.

5 Mistakes To Avoid If You Want To Make The Best Mashed Potatoes

Mistake #1: Your potatoes are too wet

It sounds a little strange (considering most of us boil potatoes to make mashed potatoes), but according to chefs, more water in potatoes means you can’t add as much milk, cream and butter. When this happens, your mashed potatoes aren’t as creamy, and the texture isn’t as smooth. “You lose that velvety mouthfeel,” Chris Crary, culinary director of 1 Hotel Nashville, told HuffPost.  To prevent this from happening, Emily Mingrone, the owner of Tavern on State and Fair Haven Oyster Co., boils her potatoes whole, with the peels on (to diminish the amount of water they absorb). After they’re cooked, she peels and strains them, then puts the potatoes back on the burner over high heat for a minute or two, “just until any remaining water in the pan evaporates and you no longer can hear steam being released.”  Crary bakes, rather than boils, his potatoes in a 350-degree oven on a bed of salt for an hour (or until soft) to ensure he can pack plenty of butter and milk into his mashed potatoes without making them soupy. “If you do boil them in water, dry them out on a sheet tray in the oven before going to mash them,” he said.

 

Mistake #2: Letting the potatoes get too cold

“Mashed potatoes do not stay fluffy when the temperature changes,” said Vincent Menager, the VP of culinary for STK Steakhouse. This means you should avoid adding cold milk or cream to mashed potatoes, and keep them nice and warm until dinnertime. If your potatoes get cold, Menager notes that the starch in the potatoes will set and make it difficult to regain that nice, fluffy texture.  “Mashed potatoes like to stay cozy, just like us!” Menager said. To keep your potatoes warm, he recommends keeping them covered in a warm oven (turned off) or in a 140-degree bain-marie. The closer you can cook your potatoes to dinnertime, the better.

In a similar vein, you want to mash the potatoes while they’re still warm. “If the potato is cold, not only does it make it a bit more difficult to mash but you won’t get the rich, luxurious texture you’re looking for,” said Brian K. Fowler Jr., the executive chef at Blackbarn Restaurant. To fix this, he recommends bringing your potatoes back up to a simmer, then straining and mashing or whipping immediately.

Kelsey Barnard Clark, a “Top Chef” winner, owner of KBC and author of “Southern Grit: 100+ Down-Home Recipes for the Modern Cook,” also recommends mixing the potatoes before they have cooled. After boiling the potatoes, she drains them and places them on a sheet pan to dry them out in a 300-degree oven for 5 to 10 minutes. “As soon as they’re out of the oven, you want to mix them and add in your hot butter and cream mixture,” she said. “This ensures your potatoes do not get gummy.”

 

Mistake #3: Over-mixing the potatoes

Overworking mashed potatoes results in an unfortunate glue-like texture, and for this reason Michael DeLone, executive chef of Nunzio, recommends people stay away from electric mixers. “Unless you watch them like a hawk, mashed potatoes very quickly cross the line from fluffy and whipped to gluey and sticky,” he said. While other foods get fluffier and lighter the more they’re mixed as air is incorporated, the opposite happens for potatoes because of their high starch content.  “Over-mixing or beating makes potatoes gummy, because it breaks down the cell structure too far, releasing too much starch,” Mingrone said. “You want them to be broken down, but gently, with as little manipulation as possible.” She echoes DeLone’s recommendation of not using an electric mixer.

When potatoes are over-whipped or overcooked, the starch molecules leak out of the potato cells and result in what DeLone describes as a gummy, gluey mess. Once the potatoes are at this point, there’s no going back. “Many people think that adding more liquid (or even worse — beating more air into them) might help, but it won’t,” he said. “The addition of liquid only makes it a gummy mess sitting in a pool of melted butter or cream or water because the starch molecules, while big, don’t have the ability to absorb the liquid. There’s no bringing them back because the damage, chemically, has already been done.”

To prevent over-mixing, DeLone recommends using a potato masher (“for those who like their mashed potatoes with a few authentic lumps”) or a sturdy metal whisk for a smoother, almost pudding-like finish. “Consider it an arm workout,” he said.

 

Mistake #4: Adding all the liquid at once

When it’s time to add your cream (or milk) and butter, there are a few things to keep in mind to prevent over-mixing or adding too much liquid. First, Mingrone recommends warming the cream and butter together so they’re easier to incorporate into the potatoes. Warm the cream and butter in a small pot over low heat, just until the butter melts into the cream. This will help prevent over-mixing and make sure the potatoes stay warm and fluffy. “Start slowly, and add a little of the mixture at a time to make sure it’s the consistency you’re looking for, rather than adding the liquid all at once,” she said.

Even if you’re following a recipe, pay attention to the texture of the potatoes and stop before your mashed potatoes turn into potato soup. “Every potato is different!” Mingrone said. “One batch might absorb moisture faster or slower than another, so you want to add a little at a time until you achieve the desired consistency. If you pour it in all at once and it’s too much, there’s no going back.”

 

Mistake #5: Using milk instead of cream

For rich, creamy mashed potatoes, heavy cream is the way to go. “Always use heavy cream,” Clark said. She explained that because of its higher water content, milk yields a less creamy and less flavorful mashed potato, and tends to slightly separate from the potatoes. For rich mashed potatoes, Mingrone adds a half-stick of butter for every cup of cream.
